What is tadka?

The soul of Indian cooking

Tadka (also called tempering, chaunk, or baghar) is the technique of blooming whole spices in hot fat to release their essential oils. It's the first — or last — thing you do in almost every Indian dish, and it's what gives dal, sambar, and sabzi their signature aroma.
